Tunica Resorts, Mississippi, March 29, 2004 - John
Thomas, CEO of International Restaurant & Hospitality Rating Bureau
presented the coveted and prestigious International Award of Excellence to
LB’s Manager, Christopher Clark and Chef Allan Rupert, naming LB’s
Steakhouse as one of America’s top 25 steakhouses in the 21st
century.
Selections are made by members of the Bureau. The Bureau has been serving
the Hospitality Industry worldwide since 1949. The International Award of
Excellence was established in 1995 as an extension of the Bureau’s 52 years
of programs and services to the entire Hospitality Industry. Its purpose is
to recognize those establishments consistently outstanding in their field of
endeavor.
John Thomas, during the award presentation, said “LB’s Steakhouse at Grand
Casino Tunica was a unanimous choice to receive the International Award of
Excellence as one of America’s Top 25 Steakhouses by scoring exceptionally
high point totals, which made LB’s rank in the 25 highest scoring in the
Steakhouses category. LB’s offers Midwestern corn-fed prime steaks as well
as fresh seafood, and creative daily specials. I am pleased to bestow this
honor, our Award of Excellence, to LB’s Steakhouse for being selected as one

Offers up Gourmet Delicacies At the Star Chefs Gala to Benefit March of
Dimes
Grand Banquet Chef, Keith Lazcszak, Executive Pastry Chef
Juan Urcia and Executive Chef Steve Pairolero, with the help of Grand Casino
culinary interns offered up gourmet delicacies at the Star Chefs Gala for
the benefit of March of Dimes. Guests toured The Peabody banquet room,
visiting station to station tasting specialties from area restaurants. Grand
Murano’s Italian Restaurant was featured serving a Bruschetta station, a
Polenta Station a Dessert Station that included Chocolate and flavored
sabayon station with fresh fruit brochettes, tiramisu, panna cotta, canollis
and rum balls.

PPE Tunica Associates please the palate, giving of time and service
for 2003 Chef’s Celebrity Gala for the benefit of the Child Advocacy Center.
Celebrity servers were PPE’s own Sheraton V.P. of
Operations Joe Maloney and Regional Vice President of Food and Beverage, Tom
Biglan, C.E.C.

Singleton named Executive Chef of Bally’s Casino
Tunica Resorts, MS, November 10, 2003 -
Bally’s Casino Tunica has named Willie Singleton, Executive Chef of Bally’s
Casino and Hotel.
In his new position, Singleton will be responsible for overseeing the
operation and management of all food service outlets at Bally’s Casino. This
includes the Cornucopia Buffet, Delta Levee Cafe, Gold Star Snack Bar and
the Associate Dining Room.
“We welcome the opportunity to promote from within”, said Pete Burns, Sr.
Vice President and General Manager of Bally’s. “Willie did a great job at
Grand Casino, displaying excellent culinary management and leadership. We
know that he will be an asset to our organization, and will lead our
culinary operations, while continuing to improve our food and beverage
operations at Bally's"
Singleton joins Bally’s Casino with over 15 years in the Food and Beverage
industry. Prior to joining Bally’s, he was the Executive Sous Chef, at Grand
Casino Tunica. His formal culinary education was received at the U.S. Army
Cooking School.
A native of Georgia, Chef Singleton has received numerous awards and medals
for his culinary expertise. He now resides in Walls, Mississippi with his
family.
Hollywood Casino casts Ronnie
Austin as the new Fairbanks Steakhouse Chef.
Chef Austin, will oversee all food preparation at Fairbanks.
Austin has been in the culinary industry for sixteen years. Austin’s
culinary training includes direct training under Ted Posecai, who was a
protégé of celebrity chef Paul Prudhomme, one of the country’s
best-known chefs, and Frank Brigtsen of Brigtsen’s Restaurant in New
Orleans. Austin fulfilled a two-year apprenticeship at the Greenville
Golf and Country Club in Greenville, Mississippi and spent eleven years
there as Sous Chef and then Executive Chef.
